WHere is a simplified take on a drink found on our latest cocktail list. Designed as a large-volume prepared mix that is loaded with essence of a festive period, which makes it excellent for a festive gathering. Any leftover citrus syrup to use in morning drinks, puddings, or to make additional servings of the drink.
The Bikini Cocktail
Serves 10 people
For the Clementine Cordial (produces 750ml)
300ml recently pressed clementine juice
200ml recently pressed lemon juice
500g caster sugar
To make the Cocktail (produces 850ml, serving 10)
400ml premium vodka
100ml dry gin
150ml peach liqueur
200ml citrus syrup (see above)
Fresh cranberries, for garnish
Mandarin essential oil, as a final touch
Directions
To prepare the Syrup: Place every items in a pan, heat until it reaches a simmer, mixing to dissolve. After that, take off the burner allowing it to reach room temperature fully. Pour into a sterilised bottle, close it and refrigerate it in the refrigerator, where it will keep for up to a month.
For the Cocktail Base: Pour all the spirits and syrup into a sizeable container, allow it to infuse for 60 minutes, then filter it , ideally through muslin, making it fully clarified.
When ready to serve: Add 85ml of the batch mix into your mixing glass filled with ice, gently stirring lightly for one minute to cool it down. Pour into an cold coupe glass or similar, decorate with the cranberries adding the final touch with a quick spritz with the mandarin essence above the glass.
